Birch syrup
Birch syrup is a savory mineral tasting syrup made from the sap of birch trees.
Birch sap is collected only at the break of winter and spring when the sap moves
intensively. as in late spring it becomes bitter. When fresh, it is a clear and uncoloured
liquid, very similar to water, often slightly sweet After two to three days, the sap starts
fermenting and the taste becomes more acidic. Birch sap may be consumed both fresh
and fermented.
Birch sap collection is done by cutting a finger thick branch of the tree and then
immediately there should come some sap out of it. You can lead the sap into a bottle which you fix at the tree. During one day you will have one liter of sap!
Tapping a tree does not harm the health of the tree!
Recipe:
For one liter of sap you need:

1 citroen

400g sugar

and a bit of honey…

or just be creative
You mix the sap with the sugar and lemon slices and the honey. let it rest for a while and then you cook it for a few minutes. Afterwards you fill it again in a clean bottle.
It´s a very refreshing and tasty drink! but you can also mix it in the yoghurt, pancakes, other desserts!
